Yulin Food

Plenty of delicious food are made in Yulin which is the junction of Guangxi flavor and Guangdong flavor. Those food includes seafood, meat of poultry, and its snacks covers dessert, rice noodles, and drinks.

Before an introduction about specific dishes, I would like to introduce Yulin morning tea to you. Morning tea is a specialty of Guangdong, and it is also popular in Yulin which borders on Guangdong in the east. Morning tea includes desserts, and snacks, like various steamed buns or baozi with different stuffing, chicken feet, dumpling, shaomai, steamed red date cake, steamed vermicelli roll, fried rice noodles, and conjee. Then where should you go to eat a morning tea? Morning tea is available in hotels, and there are several hotels having delicious morning tea, like Lijing international hotel, De Li hotel, Fenglin international hotel. And you may go to a food stall to eat morning tea.

 

Luchuan pig's trotters/

 

Luchuan pig's trotters/陆川猪蹄 is a dish of Luchuan flavor, and its cooking is created by Luchuan people. The cooking is time-consuming, and the first step is to clean the prepared trotters and cook it in boiling water for about thirty minutes, then the second step is to soak them in clean and cold water for one and half an hours and cut the trotters into slices. And the third step is to cook some white vinegar with white sugar and salt, and soak sliced trotters into the cold white vinegar for about six hours. The last step is to put trotters slices on a plate and add seasoning on the sliced trottets. Its seasoning are made from fried peanut, pickled ginger and so on.  The cooked pig’s trotters are in light color and the meat is crisp.

 

Steamed Liangting chicken

 

Steamed Liangting chicken/水蒸凉亭鸡 is a chicken dish in Beiliu, of Yulin. The chicken is limited to Liangting chicken because it is raised in a natural way and has a good taste. Liangting chicken is a geographic product with an official identification from the  National Quality Testign Bureau. The cooking method of this dish is steaming. Before steaming, the chicken should be cleaned and rubbed with special sauces and seasoning. After steaming, one step is a must, which is to pout hot chicken soup on the chicken. This dish has a rich taste of chick meat, and the soup is fresh and has a delicious smell.

Yulin meat ball/玉林肉丸 is a traditional dish in Yulin for over one hundred years. Meat ball is made from minced beef, and at the early time, meat ball is hand-made, and its procedure is complicated, then it is machine that makes meat ball, but its flavor are kept well. The cooking of meat ball is simple: cook it in boiling water and add green onion into the soup after the cooking.

 

Snack

Niuba or beef jerky/ 牛巴 is the most famous traditional snack in Yulin, with a history of hundreds of years. The making of this snack is not simple. The first step is to cut beef meat into slices and soak the meat with seasoning for one to two hours, and the seasoning are composed of baijiu, salt, soy sauce, white sugar, ginger, garlic green onion, and bake soda. The second step is to dry the meat slices to middle dry. The third step is to cook the meat slices with seasoning made from anise, cinnamon, ginger, Sichuan pepper, garlic, oil and so on. The cooking has two parts, frying with big fire and stewing with soft fire for one to two hours. Yulin niuba has a good smell and a delicious taste. In Yulin, Yulin niuba is sold everywhere, and you may buy a packet of Yulin niuba in a supermarket.

Niunan fen/牛腩粉 is a kind of rice noodles of local flavor, and its main ingredients are rice noodles, vegetable, sirloin and soup. Sirloin is specially cooked with seasoning like ginger, rhizome nardosachoys and amomum tsao-ko for half an hour. The soup is made from sirloin, and pork bone.

Xian xia chang fen or steamed vermicelli roll with prawn/鲜虾卷粉 is a snack made from rice. Rice is grinded to rice milk, and rice milk is steamed with stuffing like fresh prawn meat, pork, egg, and Chinese leek. This snack is eaten with dipping sauce made from peanut oil, soy sauce and garlic.

It has other food, snacks and desserts, like zhu du ji, shrimp dumpling, steamed sweet potato and fried sliced meat. Yulin people are also like to eat seafood, and seafood barbecue is popular in night market. For having a taste of such food and snacks, you may go to a food street, like Xijiekou food street in Jiefang road, Meilin street and cultural square.
