Liuzhou Food

Liuzhou gourmet food has local flavor and is cooked from local  local agricultural products, and those products and people's taste have a great influence on cooking. In Liuzhou, people listent to the calls from their tastes and  create various delicious food,  from main courses to snacks. Some are famous in the whole country, and some are popular in the local region.

Famous Dish

Fried small fish with soybean and sour bamboo shoot/黄豆酸笋焖鱼 is a popular dish in Liuzhou and Guangxi, and it is broadcasted in a documentary film, A Bite of China, which records delicious food in China. The ingredients of this dish can be seen from its name, small fish, soybean and sour bamboo shoot, and the seasoning are pepper, sliced ginger, soy sauce and garlic. The first step is to fry small fish and soybean to a little dried in oil separately, and the second step is to add all ingredients and seasoning to make this dish.

Tian luo ya jiao bao/田螺鸭脚煲 is a local spicy dish of Liuzhou flavor. Its ingredients are river snails and duck feet and the seasoning are pepper, green onion, garlic and ginger. The first step is to fry duck feet, and the second step is to fry the seasoning. The third step is to put river snails, duck feet, fried seasoning  and water into the casserole, and use soft fire to steam the dish. Duck feet should be on the top of river snails, and all ingredients should be in the water.

Luo si ji/螺蛳鸡 is like hot pot of Liuzhou flavor. Its ingredients are river snails, chicken and sour bamboo shoot, and its seasoning are ginger, green onion, garlic, pepper, fermented tofu, anise, perilla and myrcia. The cooking is not complicate, and the first step is to cut chicken meat to small cubes and fry the meat, the second step is to cook river snails and sour bamboo shoot to a little dried, the third step is to add chicken meat and seasoning to the cooked river snails, and cook them for about ten minutes, and last step is to add perilla and fermented tofu before turning off the heat.

Snack

Luo si fen is a kind of rice noodles in Liuzhou, special in its soup made from river snails, and it has a flavor of spicy, and sour. Its ingredients are rice noodles, river snail, dried beancurd sticks, vegetable, sour bamboo, fried peanut, sour turnip and black fungus, and its seasoning are green onion and pepper. Except rice noodles, all other ingredients are well cooked in advance. The soup is made from river snail,and spices like anise, cinnamon, lilac, and pepper powder.

Niu xian zi/牛鲜子 is a traditional halal food in Liuzhou, and sold in Muslim restaurant. Ma da gun/马打滚 is a snack with an appearance like glue pudding, and made from sticky rice flour, bean flour sesame and brown sugar. Dong gu tang bao/冬菇汤包, is a kind of soup dumpling stuffed with dried black mushroom. Da you cha refers oil tea of the Dong in Liuzhou, and it is made from tea leaf, sticky rice, peanut, ginger, green onion. This oil tea is salty and has a good smell. Du le ba bao fan/都乐八宝饭 is a snack of steamed sticky rice, and its ingredients are sticky rice, white suger,  red bean paste, lotus seed, dried grape, candied date, and preserved fruit. Feng chao xiang yu jiao/蜂巢香芋角 is a deep-fried  dissert with a shape like bee nest, and its crispy wrapper is made from Lipu taro and its stuff is made from pork, shrimp and dried black mushroom.

Food street

In the down, there are several food street well-known to local people. Wu jiao xing food street/五角星美食街 has a variety of snacks like milk tea, dissert, kebab and many restaurants, which is in a business district, the cross street of Zhong shan middle street and Jiefang south street, and has a big visitors flow. Jin yu xiang food street/金鱼巷美食街 has various snacks, like congee, and luo si fen, and it is in the end of Wu xing street which is a business pedestrian street. Qing yun food city /青云美食城 has most of delicious snacks in Liuzhou, like sticky rice, dissert, roasted and fish. Other foot streets are like  Hua yuan food town/花园美食小镇 and Jin ma food square/金马美食广场. Except those streets, Liuzhou still has many food streets, and food centers in shopping centers and shopping malls.
