Drinks and Beverages
Sanhua jiu or Sanhua liquor is a brand of biajiu or liquor made in Guilin, Guangxi, which is one of the best baijiu with rice fragrance and is praised as the king of baijiu. Sanhua jiu has a long history of hundreds of years, which was called Ruilu, and was popular among drinkers. It was once praised by Fan Chengda, an government officer in the Song Dynasty: it is full of the essence of liquor. Sanhua jiu is made from materials of best quality: rice, water, and yeast, and with unique and superior brewing technology. The above three materials play an important role in making liquor, which have a big saying in the quality of liquor. In the liquor-making process, spring in the underground is of top priority, which is clean and sweet, and has minerals. The yeast is made from herbs, which smells fragrant.
Guangxi liangfen is a kind of local beverage for relieving summer heat, which is fragrant, sweet, smooth and refreshing. It consist of smooth semisolid paste and sugary water. The paste is made from a kind of herb, called liangfen herb, which is a local herb in Guangxi. How to make Liang fen? First, prepare powdery liangfen herb and add water, second, boil it to paste, third, cool it to jelly and stir it to small lumps; last, use some sugar and water to make sugary liquid, then add it to the liangfen paste.
Guilinggao is a kind of herbal jelly, having many medical functions, which are good for health. Guilinggao is a black jelly, though it has a special smell of herb, it tastes sweet and smells fragrant. And it is made from materials of tortoise and several medical herbs like dihuang, tufuling, and honeysuckle. Guilinggao is eaten as a dessert, and you may buy in beverage store, dessert store and supermarket. If you buy a piece of Guilinggao in a supermarket, you may add milk, honey or other things to enrich its flavor, as you like.
Food and Snack
Mifen is a kind of food of southern flavor in China, and in Guangxi, there are many kinds of mifen of local flavors, like Guilin mifen, Liuzhou Luoshifen, Nannning Laoyoufen and Huajia fen. Mifen is rice noodles, and its material is rice which is grinded to fluid and made to stick, while mifen in Guangxi has two shapes, round and flat, and it is cooked with various meat , vegetable, and some seasoning. It is sold in three weight size, small( 1 liang), middle(2 liang) or large(3 liang). Liang is a weigh unit in China. And you could add several kinds of pickled vegetable for your likes, like bamboo shoot, green bean.
Guilin mifen is a kind of rice noodles in Guilin, and it has three types, the gravy, the broth, and the freshly-cooked. For the first two, the rice noodles are heated in boiled water, and then added with different meat. The gravy mifen is added with stewed meat, and the broth with meat soup. While as for the freshly-cooked, it is cooked with rice noodles and fresh meat and vegetable after you make an order. Liuzhou Luosifen has the materials of rice noodles, and specially-made broth which is made from Luosi, a kind of river snail. Huajiafen is cooked with mifen and huajia which is the Chinese name of clam.
Mifen in Guangxi is a delicious and convenient food which is usually eaten in breakfast, and it is so popular that it may be eaten in breakfast, lunch and dinner.
Lemon duck is a local food in Nanning, and the duck is cooked with special pickled sour seasoning, like Suanye, picled vegetable and fruit, sour pepper, sour ginder, and pickled lemon, and those seasoning are used to remove the unfavorable smell of duck and enrich its flavor. Lemon duck is very delicious, and it tastes a bit sour and has the fragrance of lemon.
Pijiuyu is a renowned dish in Yangshuo county, Guilin. the fish is the local fish, and grows up in the Li river or other rivers in Yangshuo which have clean water. the fish cooked with some seasoning, like ginder, garlic, pepper, and beer. Beer would give the fish a delicious flavor, and the meat of the fish is soft and tastes good.
Fruits
Guangxi is in the south of China and has a subtropical monsoon climate. In Guangxi, farmers plant tropical and subtropical crops, thus it has abundant fruits, like pineapple, banana, litchi, longan, mango, mangosteen, durian, passion fruit, pawpaw, jackfruit.
